This recipe is in honor of my dear Aunt Emily! A lot of people in the South have made this sheet cake for years, but Aunt Emily always manages to get extra sweetness into it!
Special Chocolate Cake
Aunt Emily always makes this chocolate cake when Nick comes to visit! She has such a gift for making people feel special.
2 sticks butter or margarine, (or 1/2 cup shortening plus 1 stick butter)
4 T. cocoa
1 cup water
2 cups flour
2 cups sugar
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
1 heaping T. cinnamon (opt.)
Melt butter and shortening in a saucepan or microwave. Add cocoa; stir until smooth; cook about 1 minute. Turn off the heat, and add the other ingredients in order listed, stirring after each one. Pour into greased and floured 13 X 9 or 11 X 15 pan; bake at 350° until wooden pick inserted in center comes out clean, 20-30 minutes. Begin making icing while cake is in oven. Melt together:
1 stick butter or margarine
5 Tablespoons cocoa *(Aunt Emily makes them heaping)
About 3 cups sifted confectioner’s sugar
1 tsp. vanilla
6 Tablespoons evaporated milk
1 cup pecans (chop, or use halves)
Stir until smooth. Stir in chopped pecans, or use halves to decorate the top. Spread over warm cake.
The cake is old-fashioned, smooth, moist, and easy to make. Aunt Emily says she used to use a saucepan but now she uses the microwave.
