Milk and Honey Mojo Bars
Everyone needs a little ‘Mojo’ now and then, whether you are riding your bicycle 100 miles or just dealing with unreasonable people at work. Why buy expensive protein bars when you can easily create these delicious ones at home? Make a variety of flavors with the optional toppings.
3 1/2 cups rolled oats
1 cup peanut butter
1/3 cup butter
1/2 cup packed brown sugar
1/2 cup honey
1/ 2 cup powdered milk
2 t. vanilla extract
1/2 cup flaked coconut
1 cup shelled, roasted peanuts (save half for the top)
1/2 cup butterscotch chips
Optional toppings: mixed nuts, seeds, broken pretzels, dried apricots, blueberries, or cranberries, chocolate chips, m&m’s
Preheat oven to 350 degrees. Spread oats on a cookie sheet, and toast 15 minutes, stirring once. Meanwhile, press parchment paper into a 13X9 baking dish. Spray with Pam.
In a large bowl, mix together peanut butter, butter, brown sugar, honey, milk and vanilla until smooth. Mix in oats, coconut and peanuts.
With buttered fingers, press the mixture into prepared pan, sprinkling with reserved peanuts and butterscotch chips, pressing them in firmly. Bake for 20-25 minutes. Let cool, then remove parchment to a cutting board and slice into bars.
Wrap the mojo bars individually and decorate with inspiring and motivating pictures.
