French-Toasted Fruit Sandwiches

French-Toasted Fruit Sandwiches

6 thin slices French bread or sourdough bread
Soft butter (spread thinly each piece of bread)

2 cups sliced fruit (peaches, strawberries, bananas, nectarines, pears)—toss lightly in a bowl with:

3 T. sugar
1/4 t. vanilla, and sprinkle with:
lemon juice or Fruit Fresh.

Top bread with fruit mixture, crushing lightly with a fork. Top with another slice of bread; press together firmly.

2 eggs
1/2 cup milk
2 t. sugar
Dash salt

Beat together.
Dip sandwiches in mixture. Brown slowly in a lightly buttered skillet or griddle.
Sprinkle with powdered sugar.

Makes 3 sandwiches.
