Jalapeno Cheese Squares
3 or 4 fresh jalapeno peppers
4-6 cups (1 to 1 1/2 lb.) grated cheese
(sharp cheddar, Monterey Jack, or combination)
Pinch cayenne pepper or paprika
Seed and chop the jalapenos, wearing disposable gloves to protect your hands. Avoid touching your face during the time you are chopping hot peppers. Remove and discard the gloves. Pickled jalapenos may be used if you prefer.
Beat eggs in a large mixing bowl. Add cheese, jalapenos, and cayenne pepper. Sprinkle with paprika if desired. Spoon into a well greased 9-inch square pan, smoothing the top. Bake at 350° for 30 minutes. Allow to cool and cut with a sharp knife.
16-20 appetizer squares.
