Crunchy Romaine Toss
Enough for a big crowd!! (8-12, depending on what else is served)

Crunchy topping:
Sautee together until brown, then drain on paper towels:
1 cup walnuts or other nuts, chopped
1 pkg. Ramen noodles, uncooked, broken up
(use flavor packet for something else)
4 T. unsalted butter

1 bunch broccoli, coarsely chopped
1 head Romaine lettuce, washed and torn (remove the thick white ribs)
4 green onions, chopped, optional

Sweet and Sour dressing:
Shake together in a quart jar:
3/4 cup oil
2/3 cup sugar
1/2 cup red wine vinegar
2 T. soy sauce
Salt and pepper to taste

This salad has a fresh, rather oriental flavor. You can store the crunchy topping and the dressing separately and make smaller salads if desired.

For a main dish, try adding grilled Asian chicken strips. If you can get good tomatoes, they are also good on this salad.
4-6 main dish salads.
