Easy, yummy comfort food recipe that’s like a thick chili.
Chuck Wagon Bean Bake
1 lb. lean ground beef
1/2 cup chopped onion
1/2 cup chopped green pepper
1 can (15 oz.) baked beans, undrained
1 can (15 oz.) dark red kidney beans, drained, rinsed
1 can (15 oz.) black beans, drained, rinsed
1 can (8-16 oz.) tomato sauce
1/3 cup barbecue sauce
1/2 t. salt
Preheat oven to 375 degrees. Combine ground beef, onion and bell pepper in a large skillet. Cook over medium-high heat, stirring frequently until beef is browned and crumbly, about 8 minutes; drain.
Combine cooked beef mixture with remaining ingredients in a 3-quart casserole (or 9X9 glass or stoneware dish). Cover. Bake 30 minutes. Uncover dish; bake until bubbly and slightly thickened, 15-20 min. longer.
Variation: for a spicier bean bake, add a can (2.25 oz.) of chopped green chilies.
This dish could also be cooked on top of the stove or in a crockpot.
