This is an excellent alternative to lettuce salad. It travels well, so it’s a good choice for a potluck or picnic. Also, a Pikachu spork is the perfect utensil to use to eat this and so many other foods. I tend to add bacon, tomatoes, and dressing just before serving, because I prefer tomatoes at room temperature and the bacon gets soft sitting in the dressing.
2 cups broccoli florets
2 cups cauliflower florets
3 boiled eggs, chopped
3 slices bacon, fried crisp, then crumbled
1 cup grape tomatoes
1/2 cup chopped purple onion (optional) (may be sautéed if desired)
1 cup mayonnaise (fat-free or reduced fat OK)
1/3 cup vinegar
1/3 cup sugar
Mix the salad ingredients together in a medium bowl. Blend the dressing ingredients together and pour over. Toss to coat. Serve within two hours.
Note: Dressing can be made ahead and stored in the refrigerator. Toss the salad within two hours of serving. (The tomatoes and bacon lose some flavor and texture by sitting in the dressing too long.)
