Grilled Cheese Sandwich
Each person seems to have a specific idea about what makes the perfect cheese sandwich. This is mine. Use different cheese, bread, spreads or toppings if desired.
2 slices bread
2 T. mayonnaise
2 oz. sharp cheddar cheese, sliced
10-12 slices sweet lime pickles
2-3 T. butter
Preheat a skillet to medium high heat while making the sandwich.
Spread mayonnaise on bread. Arrange a layer of sliced cheese and pickles over one slice, then top with the second slice of bread. Spread softened butter on outside of sandwich, or melt the butter in the skillet and then turn the sandwich to coat the outside of the bread with butter. Turn heat to medium. Place the lid over the skillet partially, to keep the heat in without making the sandwich soggy. After about 2 minutes, turn sandwich carefully to brown on the other side. The bread should be golden brown and the cheese melted. Watch carefully to prevent burning.
Grilled cheese sandwiches are perfect with tomato soup.
