Lemon Poppyseed Waffles

Breakfast is so special with these flavorful crisp waffles with their own tart lemony glaze.

Lemon Poppy seed Waffles

grated rind of 1 lemon
3-4 T. fresh lemon juice (about 1 lemon)
Cooking spray
1 1/2 cups sugar (or sugar substitutes)
3 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1 stick butter, softened
1 teaspoon lemon extract
3 large eggs
1 cup buttermilk
2 T. poppy seeds

Lemon cream cheese glaze:

2 T. cream cheese, softened
2 T. butter, softened
2 1/2-3 cups powdered sugar
grated rind of one lemon
3-4 T. fresh lemon juice

Combine grated lemon rind and 3-4 tablespoons juice in a small bowl.
Sift dry ingredients together.
Cream butter and sugar in an electric mixer at medium speed until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Add flour mixture and 1 cup buttermilk alternately. Beat in rind, juice, and poppy seeds.
Bake in preheated waffle iron until golden brown. Makes about six 8-inch round waffles.

To prepare glaze, beat butter and cream cheese until smooth. Slowly beat in powdered sugar, rind, then enough juice to make a smooth glaze. Drizzle glaze over waffles as desired.
