This is one of those recipes my mother used to make only once a year or so, usually during the Christmas holidays. All the kids in the family hungrily anticipated the arrival of the cheese straws, and there were a lot of them stolen before the parties where they were supposed to be served.
3 sticks butter, softened
1 lb. sharp cheddar cheese, grated
1/2 t. salt
4 cups flour
Cayenne pepper to taste
Cream butter and grated cheese. Add salt, pepper and flour. Load cookie press; pipe straws onto baking sheets. Bake at 400 degrees until golden brown, 12 to 15 minutes.) Makes one large tin of straws.
