Pecan Pie Squares
rich, buttery and sweet
3 cups flour
1/2 cup sugar
1 cup butter (two sticks), cut into small pieces
1/2 t. salt
Combine in a food processor or large mixing bowl, until mixture resembles crumbs. Press firmly into a buttered 15 X 10 X 1 (jelly roll) pan, making a rim around the edge. Bake at 350° 20-25 minutes, until lightly browned.
Meanwhile, brown butter and make filling:
4 T. butter, melted, browned and cooled
1-1/2 cups light or dark Karo or maple syrup
1-1/2 cups sugar
1-1/2 t. vanilla
3 cups pecans
Combine filling ingredients, pour evenly over hot crust. Return to 350° oven for another 25-30 minutes until set and browned. It should not look white or jiggly when it’s done. Cool before cutting. They will cut most cleanly if refrigerated first.
These freeze beautifully. Wrap tightly in foil in a single layer.
