Twice-Baked Sweet Potatoes

Sweet potatoes are one of the most nutritious foods in existence.  Fixed this way, they make a wonderful simple lunch with a green salad on the side. 

Twice-Baked Sweet Potatoes

4 sweet potatoes
1/2 C. grated sharp cheese
2 T. butter
4 slices fried bacon

Bake sweet potatoes until tender (350 – 400 degrees, 45 min-1 hour depending on size). Let cool. Cut a slice from the top. Scoop out the potato and put in mixer bowl. Add cheese, melted butter, and crumbled bacon. Mix. Stuff into potato shells. Bake about 30 minutes, until well heated.

This is an attractive addition to the plate, and nice for company meals. With a salad it makes a satisfying lunch.
