Corn Dogs and Onion Rings

corn dogs and onion rings
These freshly made dogs are so much better than any other corn dog you will find.
Tip: pour the batter into a tall glass for easy dipping.

To make onion rings, add just a bit more milk to the batter.
Corn Dogs

10-15 wieners, dried with paper towels
Wooden sticks (optional)
Hot oil for frying (I like peanut oil)
All-purpose flour

Batter:
1 1/8 c. flour
3/4 c. cornmeal
2 T. sugar
1 1/2 t. baking powder
1/2 t. salt
2 t. melted shortening
1 egg
1 c. milk

Beat ingredients together with a wire whisk. Insert sticks into wieners. Dip wieners in flour, then batter, and deep-fry (400 degrees) 1-2 minutes on each side. Drain on paper towels; serve immediately with mustard and ketchup.

Make onion rings using the same technique, but thin the batter with a little milk first.
